A Processing Intervention for Lowering Initial Contamination
Lower initial contamination likely comes from the fact that Rinse & Chill facilitates carcass dressing procedures, particularly hide removal operations where most contamination occurs. Easier, smoother hide pulls translates to less aerosolizing of contaminants. The Rinse & Chill solution has also been demonstrated to be antimicrobial in repeated in vitro tests at Kansas State University and at the University of Minnesota. This solution is already present in the capillaries below the hide, providing for easier hide separation, less aerosolizing of contaminants, and coating the surface of the carcass. The carcass surface becomes slippery to the touch, instead of sticky. The coating of solution over the carcass surface is thought to provide
mechanical interference with bacterial attachment. |
